Nothing is what it seems. Due to the heat of the fire, the sugar in carrot, onion or even garlic and in many of the ingredients caramelized and gets into a sugar-sweet taste. In fruits acidity changes to sweetness, like with baked apple and much more. The freshness of the raw fruits in combination with warm contents brings a special note. The different cooking states of the same ingredients as the beetroot cooked in the embers and raw beetroot, raw apple and roasted apple are not only unusual from the chewing experience, but also bring new flavor combinations.
